The cattle have been moved to the species-rich meadows for a short while so they can lightly graze the new growth, and keep any scrubby areas at bay. One of these meadows runs along the public footpath and the cattle like to rush to the meadow gate to investigate any walkers (and dogs on a lead) passing by. Perhaps in hope of a juicy apple or carrot, which they do sometimes get treated to by us!
